Head out on a fun-filled farm tour with the one and only Tank Jackson of Holy City Hogs. You’ll hear about the passion behind preserving heritage hog breeds, as well as a few pitmaster secrets shared over a bbq lunch prepared by all of Tank’s friends, including Peg Leg Porker’s Carey Bringle (Nashville), John Folse of New Orleans, and Sophina Uong of Calavera’s Kitchen (San Francisco). John Martin Taylor, American food writer and culinary historian, also known as “Hoppin’ John,” will be on hand to talk about the foodways and customs of the South. Ruinart bubbles and beer will be a’ plenty. Oyster shuckin’, too. Dress is as casual as can be. Down home flavor and warm hospitality are a heartfelt guarantee.
